We have a cast iron pan full of canola oil that's heated up to 350. It's really helpful to have a deep fryer candy thermometer to make sure how hot your oil is. You can also kinda tell when it starts to smoke up a little bit like that. And then we're just gonna add our dredged chicken livers. And we're gonna cook these for about two to three minutes on this side. Flip them. about two minutes on the other side but we're also going to be using a instant read thermometer to get them to an internal temperature of 160 165 so this hot grease can get pretty unruly it's really great if you have a protective screen that you can put over the pan while it fries These smell delicious, wish you could be here. They fried up to a golden crisp perfection. I'm gonna mix us up a little remoulade sauce to serve on the side while Jessica makes our drink.

Since we're having fried chicken livers, I wanted to do something light and refreshing for our cocktail today. So this is actually a recipe from a legendary Louisville bartender, Joy Perini, and it's called a burrito. So it's a riff on a mojito, but with bourbon, of course. So, naturally we're using New Rift bourbon. We've got simple syrup, club soda, limoncello, fresh mint, and some fresh lemons as well. So, all we're going to do is, in a cocktail shaker, without any ice, we're going to do an ounce of the limoncello. We're going to do an ounce of the simple syrup as well. And we're going to take six of our mint leaves. And I've cut my lemon up into wedges. And you're going to want to go ahead and squeeze. I've done about four medium size. So squeeze the juice in and then drop the whole lemon wedge into the shaker. Then we're gonna give this a little bit of a muddle. And now we're gonna go ahead and add two ounces of our bourbon. Oops, it'll be a little extra, so that one's going to be kind of strong. Then we go ahead and put ice in our shaker, and we're going to give this a quick little shake to mix everything up. All right, we're going to go ahead and strain this in a tall glass.

Hello. Regina Gar, Legislative Assistant for Councilman Owen, District 9. You really already read the good part of it, but this year they will have this event at Waterfront Park's Big Four Bridge. The festival has drawn tens of thousands of cents. It came to Kentucky 19 years ago, and 2026 will be Girl Scouts of Kentucky in its sixth year as the event's host and beneficiary. Funding will cover, as you mentioned, venue rental and fencing to protect artwork and festival items overnight. We can honestly do the next part in old business, but we will be asking for more money. The request is 10,000 total.

The Dainey fundraiser is kind of foreign to me, so could you just tell me what is it all about?

Yeah, it's kind of another street festival event, and I don't know the complete history. Councilwoman Chappell is better at saying that, but I know in the last five years, a Dainty planning committee, preservation committee has sort of stepped in, and part of what they do is, the Dainty's really popular, but it's also on a Monday, so having another street event on the weekend, the Saturday of, where they have like a cake wheel and shut down the street, there was OVW wrestling during the event, and I have to check exactly where the fundraising, where that goes exactly, but I do know that it's well-intended by the community and they do a lot of fun parts of that.

Okay, so you're not really sure what it's fundraising for.

They feed them, they have a celebration service, recovery service. And these people that they're bringing in are coming from everybody's district. So I'm asking for the remaining council members to help us out. Jenny Mulvey-Woolridge, Councilwoman Mulvey-Woolridge wants to add $250 to the ask. And we're trying to get $22,000. I don't know what we're up to, but we need all the help we can get.

Sure, Kip Ederle, legislative assistant for Metro Councilman Marcus McClure. I guess it's pretty self-explanatory, but basically at this intersection, Goose Creek Road and Blossom Lane, where Public Works has sort of a documented issue with some crashes, and they believe an LED-enhanced signs from the two approaches from Goose Creek Road to Blossom Lane would help with that. So that's what this is for.
